教育・研究に対する考え方

・教育に対する考え方

食と健康に関する高齢社会の現代的な問題に新しい視点で主体的に取り組むことのできる有為な人材を育成することを目標として、健康保持増進という目的意識を明確にした基礎栄養学領域の教育に取り組んでいる。特に、大学院教育においては、静岡県立大学グローバルCOEプログラムの栄養科学分野における実績に基づき、「エビデンスに基づいた保健・医療、栄養教育」を支える基礎研究の基盤を示すとともに、高度な実践研究能力を備えた栄養専門職業人の指導者や教育者の育成を目指している。基礎栄養科学から実践栄養科学までのバランスのとれた教育を心がけている。

・研究に対する考え方

栄養素に対する消化管の適応の現象は、つきつめてみると、管腔からの栄養素の情報を吸収細胞が受容し、それに対して遺伝子の発現量を変えることによって応答したものとみなすことができる。消化管に備わる食事への適応機構について、その原理ならびに分子機序を、「栄養素のシグナルによる転写因子およびヒストンコードを介した転写調節」の概念に基づいて明らかにすることを目標としている。一方、静岡県立大学グローバルCOEプログラムの臨床疫学研究部門代表としての実績に基づき、メタボリック症候群および2型糖尿病の境界領域者や軽度発症者に対する食品選択、栄養教育などの介入効果の科学的根拠を示すための研究に取り組んでいる。大規模疫学研究の対象者(健診受診者)の血液検体を用いて、バイオマーカーを測定し、血糖および脂肪蓄積の状態を特異的に反映できる指標としての妥当性を検討し、メタボリック症候群関連指標の改善を予測・評価するために最も効果的なバイオマーカーの組み合せの確立をめざしている。健康長寿の観点から、個人が持つ体質および現時点の健康指標プロファイルを考慮にいれたオーダーメイドの健康管理、栄養指導が今後益々重要になると思われるが、そのための礎石となる研究を、基礎研究の基盤の上に立って進めている。
